    • 1 tb thyme leaves
    • 10 tb unsalted butter, frozen & grated
    • 3-4 tb ice water
    • 1 tsp apple cider vinegar

    • 2 tb parsley
    • 2 tb chives
    • 2 garlic cloves
    • 1 tsp lemon zest
    • 1 c ricotta
    • 1 tb olive oil
    • kosher salt
    • freshly cracked black pepper
