Hispanic Heritage Month Dinner

A special meal celebrating both Costa Rica & Panama🇨🇷🇵🇦 I made Pescado Frito, Gallo Pinto, Patacones and a simple, fresh Avocado-Tomato Salad. Recipes below. ¡Buen provecho! ❤️

Rub

3 garlic cloves

2 tsp kosher salt

1 1/2 tsp dried whole oregano

3/4 tsp black peppercorns

1 tsp coriander seeds

zest of 1 lime

1 whole red snapper, cleaned & scored

Coating

1 c all-purpose flour

1/3 c cornstarch

1 tsp dried whole oregano

1 tsp smoked paprika

1 tsp cayenne pepper

neutral oil, for frying

Lime Pickled Onions

1 red onion, julienned

1 yellow chili pepper, thinly sliced

2 limes, juiced

kosher salt, to taste

2 tb cilantro, finely chopped

Combine all ingredients. Refrigerate for at least 1 hour.

Gallo Pinto

1 tb avocado oil

1 small yellow onion, finely diced

1 red bell pepper, finely diced

2 garlic cloves, minced

1 1/2 c black beans, cooked

1/2 c reserved cooking liquid from the black beans

2 1/2 c day-old cooked white rice

2 tb salsa lizano

1/3 c fresh cilantro, finely chopped

kosher salt, to taste

Patacones

3 green plantains

neutral oil, for frying

maldon salt

lime for serving

Avocado Tomato Salad

1 large ripe avocado, large diced

1 medium heirloom tomato, large dice

fresh lime juice, to taste

extra virgin olive oil, for drizzling

maldon salt

freshly cracked black pepper
